COFFEE ICE CREAM

3 cups of light cream
1 3/4 cups white sugar
3 eggs beaten
1/2 tsp salt
3/4 cup coffee chilled
1 cup whipping cream
Scald the light cream and add sugar. Stir until dissolved. In the top of a double broiler, add cream to beaten eggs and mix thoroughly. Cook until thickened. Remove from heat and chill. Add coffee, whipping cream and salt. Use this mixture in your ice cream maker.
BRAZILIAN COFFEE COOKIES

1/3 c. shortening
1/2 c. brown sugar
1/2 c. granulated sugar
1 egg
1 1/2 tsp. vanilla
1 tbsp. milk
2 c. flour
1/2 tsp. salt
1/4 tsp. baking powder
1/4 tsp. soda
2 tbsp. powdered instant coffee
Heat oven to 400 degrees. Mix shortening, sugar, egg, vanilla and milk until fluffy. Stir remaining ingredients together and add to sugar mixture. Mix thoroughly. Shape into 1″ balls. If dough is hard to handle, chill. Place balls 2″ apart on ungreased cookie sheet. Flatten to 1/8″ thickness with greased fork dipped in sugar (press in one direction only) or with greased bottom of glass dipped in sugar. Bake 8 to 10 minutes. Makes 4 dozen.
